LCV Kitchen Series: Salmon
Pacific salmon is one of British Columbia's great ingredients. It also has a reputation for being easy to get wrong: overcooked, underseasoned, or simply not done justice.
This class fixes that.
You will prepare salmon three ways: cedar planked, tataki, and en papillote. Three techniques, three completely different results, one fish that deserves to be understood properly. The salmon is locally sourced and of exceptional quality, because technique only takes you so far and the ingredient matters.
Led by one of LCV's most skilled chef instructors in a professional kitchen built for exactly this kind of precision work. You will leave knowing how to handle, prepare, and present BC salmon in a way that does it justice every time. Welcome drink included. Recipes and apron to take home.
