Felipe Martin, founder of ALL CAPS, a Sussex County mycelium project, will introduce you to the amazing world of mushroom cultivation and the growing role fungi play in creating healthier, more sustainable communities. Drawing on his experience in regenerative agriculture and mushroom production, Felipe will share how these incredible organisms are changing the way we think about food, farming, and the future.

Chef Cat, a French-trained chef known for her creative, ingredient-driven cuisine inspired by Southeast Asia and Japan, will prepare a delicious tasting menu that showcases the versatility of gourmet mushrooms in two comforting and vibrant dishes.
Tom Kha Lion's Mane Mushroom Soup
A fragrant Thai coconut soup infused with lemongrass, ginger, lime, and aromatic herbs. Tender Lion's Mane mushrooms lend a rich, seafood-like texture while soaking up the bright, creamy broth.
Larb Gai with Chestnut Mushrooms
A fresh and lively Thai-inspired salad featuring finely chopped chestnut mushrooms tossed with lime juice, fresh herbs, scallions, toasted rice, and just the right amount of chili.
