Appetizer:
Accras de Morue: Cod Fritters, speciality seen on every respectable French Caribbean eatery! Little fried balls of salted cod batter, perfect for an appetizer.
Sauce Chien: not made with dog! This herby and spicy salsa is to perfectly compliment the cod fritters.
Drink 1: Tradewinds
Sweet, fruity, and creamy. Lemon juice, coconut cream, apricot liqueur, aged rum
Main:
Colombo de Poulet: Creole curry from the French West Indies, equivalent to Indian Curry. Creamy, wonderfully spicy but not fiery, this thick chicken curry is like no others!
Riz Creole: an aromatic curcuma rice to serve along the Colombo.
Drink 2: Mai Tai
Fruity, Nutty, Rich. Lime juice, orgeat, orange liqueur, blended rum, aromatic bitters
Desert:
Vanilla bean, coconut cream and cardamom Creme Brulee. A French classic with an island twist!
Drink 3: Bitter Diplomacy
Dark, Earthy, Bitter. Lime juice, grenadine, Campari, aged rum, black walnut bitters
