In this hands-on class, food writer and chef instructor Shawnie Kelley will guide you through transforming fresh, seasonal ingredients into comforting, show-stopping dishes that shine on any Thanksgiving table.
You’ll explore essential culinary techniques—from roasting and caramelizing vegetables to perfectly cooking grains and legumes, building layers of flavor, and balancing textures in every dish. Learn how to elevate humble ingredients into centerpiece-worthy creations, mastering methods that ensure each bite is as rich and satisfying as a traditional holiday meal.
By the end of class, you’ll not only have a menu of flavorful, nourishing dishes, but also the skills and confidence to make vegetables, grains, and beans the stars of your Thanksgiving celebration—a feast your family and friends will remember long after the holiday ends.
On the Menu:Roasted Vegetable & Lentil Shepherd’s Pie - A hearty, comforting twist on a classic, featuring savory lentils and roasted vegetables under a golden mashed potato crust.
Harvest Salad with Greens, Grains & Beans - A vibrant, nourishing mix of crunchy seasonal greens, wholesome grains, and protein-rich beans, tossed with a bright, tangy dressing.
Roasted Delicata Squash with Cranberries & Feta - Sweet, tender squash roasted to perfection, accented with tart cranberries and creamy feta for a festive fall side.
Mushroom–Thyme Risotto with Chestnuts & Crispy Leeks - Creamy, earthy risotto studded with chestnuts and topped with crispy leeks, infused with fragrant thyme for ultimate comfort.
