ABOUT THE CUISINE
Trinidad and Tobago cuisine comes from the Caribbean and reflects the rich mix of African, Indian, European, and Indigenous influences found across the islands. Dishes combine fresh seafood, legumes, spices, tropical fruits, and vegetables, creating vibrant and flavourful meals. Meals are hands-on, social, and made to be shared, with signature dishes like Bake and Shark, Pigeon Pea Pelau, and Dhal Puri highlighting the warmth, colour, and communal spirit of Caribbean food culture.
ABOUT THE CHEF
A message from our Chef Michelle:
“My name is Michelle. I am from the lovely island nation of Trinidad and Tobago in the Caribbean and I am the mother of two daughters. My cooking journey started over 25 years ago when I was just 10. My mother had to go to work, leaving me to cook for my two younger siblings. At first, I made some pretty awful dishes but with my mother’s help and encouragement, I got better. At her suggestion, I started cooking school and soon I was creating new dishes on my own. I then trained at the Trinidad and Tobago International Hilton Hotel and worked as a sous chef at the Carlton Savannah Hotel when Queen E stayed there in 2009. When the hotel closed, I first started cooking for homeless people and then for children with additional needs. I became a mother figure for many of the kids and some of the older people. I have been volunteering for Praxis charity for the last year, a charity that helps support people on their immigration journey.
In addition to cooking, I am passionate about music, dancing and laughing! Come to my class and experience a bit of T and T culture, the flavours of Trinidad and have some fun!”

This menu contains meat (chicken) and fish (pollock) but is vegetarian friendly (5/7 dishes are meat-free). Allergens include: celery, eggs, fish, gluten, milk.
Please let us know if you have any specific dietary requirements so our team is aware ahead of the class, but kindly note that we will not be substituting any ingredients to accommodate dietary needs, so please only book into classes that suit your dietary requirements.

THE CLASS FORMAT
Our cookery classes are family-style - meaning everyone works together to prepare the dishes as a team.
While you’ll be asked to choose one dish to focus on, you’ll have the opportunity to move around the kitchen, help with other dishes, and learn from each recipe. It’s a fun, social, and collaborative way to cook! At the end of the class, you’ll sit down with the chef, class facilitator and volunteers to enjoy the delicious meal you’ve created together.
