Suitable for beginners or those wishing to learn how to work with ganache and chocolate products. This is an intense class with a lot of hands-on work.
This class has been put together to teach you about the many ways we can work with chocolate to create incredible cakes and treats. We'll be working with milk chocolate, dark chocolate and whipped ganache, compound and couveture chocolate, and creating our own rich chocolate truffles to decorate our beautiful ganache covered chocolate cake.
What we will cover:
- Demonstration of making chocolate ganache for cake covering - we'll show you how to make the perfect cake-covering ganache and you'll see it made from scratch so you can confidently make it yourself when you go home. You'll also be given a handy reference sheet for creating different flavours of ganache with milk, white and dark chocolate.
- Discussion of how to prep and store chocolate ganache
- Preparing a whipped ganache filling
- Cutting and filling a 6" chocolate cake and prepping it for covering - you will learn how to cut and stack your cake effectively for the neatest results.
- Covering a cake with chocolate ganache and creating a patterned finish - you will be taught techniques for achieving a clean and neat finish with ganache and then shown how to use detail scrapers to create a patterned scrape finish of your choice.
- Baking Chocolate 'bronuts' - we will demonstrate a brilliant simple recipe for making your own brownie-donuts ('bronuts') and you'll be dipping some in a variety of chocolate products and learning you how the product you use will affect the finish of your treats.
- Making rich Belgian chocolate truffles - we'll make these fresh in class and finish them off with a dusting of quality cocoa powder for a luxurious addition to your cake.
- Creating shaped chocolate bars - You will make a number of fun themed moulded bars and use them to decorate your cake.
We'll also show you how to add a chocolate drip to your cake and then give you the freedom to use all of your handmade creations to decorate your chocolate overload cake!
You will take home your incredible chocolate cake and of course a new found knowledge that you can use to develop your skills and love of cake decorating!
All the equipment, tools and edible materials you need will be provided for you to use during the class.
