Chef Melissa will guide you through essential pastry techniques—from proper mixing and handling of delicate batters and doughs to achieving beautiful texture, flavor balance, and professional-style finishes. Along the way, you’ll gain confidence in the methods that elevate everyday baking into true pastry artistry.
This immersive class takes place in the Watergrasshill Kitchen Studio, our beautiful commercial kitchen designed specifically for workshops. Guests will enjoy a fun, relaxed atmosphere while creating a curated selection of spring-inspired pastries.

About Chef Melissa Walnock:
Melissa Walnock is the Associate Dean of Baking & Pastry Arts at The Culinary Institute of America (CIA). Before joining the CIA faculty, Chef Walnock worked at some of the finest restaurants in the United States including The French Laundry in Yountville, CA, Jean-Georges V Steakhouse, Union Square Café in New York City and The Breakers in Palm Beach, FL.
