Join LUSH Valley and Jules Matthews for a Community Kitchen where you'll learn how to transform fresh beets into a colourful preserve that can be enjoyed all year long!
Pickled beets are a classic pantry staple, prized for their vibrant colour, sweet earthy flavour, and versatility. Whether enjoyed on salads, charcuterie boards, sandwiches, or straight from the jar, they are a delicious way to preserve the harvest.
In this hands-on workshop, you'll learn the fundamentals of safe water-bath canning while creating a batch of perfectly pickled beets. Jules will guide participants through every step of the process, from preparing and slicing beets to crafting a balanced pickling brine and following safe canning practices.
Participants will bring home a jar of their own handcrafted pickled beets to enjoy.

Jules Matthews is a musician and music teacher, beekeeper, quilter, artist and cat-servant who thrives on yard and house projects. For almost 30 years, she has saved seeds, canned, pressure canned, dehydrated, fermented, cooked and eaten her own home-grown food! Jules learned the value of food security when she became a young mom, and now grows a large percentage of what her family consumes every year, including meat that she raises and processes at home.
