Discover a fresh, liberating approach to sourdough baking in this talk with Mara Ripani, celebrating her new book The Baker’s Percentage.
Unlike traditional cookbooks, Mara’s approach moves beyond rigid recipes and into a flexible, intuitive way of baking. Learn how the baker’s percentage, a simple formula used by professional bakers, can help you create any loaf, adapt to your schedule, and truly understand the process of breadmaking.
In this engaging session, Mara will share insights from her book and years of experience teaching artisanal food skills. You’ll gain a deeper understanding of sourdough as a living, responsive process, one that can be shaped by feel, not just measurement.
This relaxed talk includes a Q&A session, and Mara will bring along her delicious chocolate bread to share.
Perfect for home bakers, curious beginners, and anyone interested in slowing down and reconnecting with traditional food skills.
