Fermentation 101
Fermentation is one of the simplest things in the world — it happens whether we want it to or not. All we really do is set the conditions and get out of the way. In this beginner-friendly class, we'll cover the basics of what fermentation actually is, how to keep it safe, and how to ferment just about anything (with hands-on veggie fermenting included). More than a recipe class, this is about finding your own flow in the kitchen — learning to trust the process, make a few mistakes, and see fermentation less as a chore and more as a meditation.
About your teacher
Yoshua Greenfield began his journey in Brooklyn's music and food scene but found his true calling in the quiet mountains of Colorado, where fermentation became a cornerstone of daily life and teaching. For Yoshua, fermentation is more than a culinary technique — it's a way of understanding the cycles of life and our place within them. He teaches from a place of curiosity rather than authority, encouraging students to experiment, make mistakes, and find their own connection to the food they eat.
