In Italy, Corzetti del Levante are described as ‘printed’ or ‘stamped’ because of the design imprinted on the pasta. This decoration is done with a stamp. Some believe that the reason for the design was to help the sauce cling better to the pasta.
In this hands-on class you will learn to make Launa's traditional pasta dough. You will then sheet the pasta, cut and stamp your pasta. You will take your Corzetti home with you.
Afterwards, you will enjoy a Corzetti dinner with a traditional TOCCO DE FUNZI recipe, (mushroom ragu), that Launa will have prepared. The pasta will be paired with salad and local artisan bread.
You are welcome to bring your own wine.
