Classic Series: Manchego and Other Spanish Sheep Cheese—$75
About this Event
Spain has a long and storied tradition of sheep's-milk cheesemaking, and this class focuses on some of its most iconic examples. We'll explore how the region's arid climate and hardy sheep breeds contribute to firm, nutty cheeses, and compare styles at different stages of aging to see how flavor and texture evolve over time.
We'll also cover the protections and traditions that govern how these cheeses are made, along with classic Spanish pairings like membrillo, marcona almonds, and cured meats along with beautifully paired wines. Whether you're already familiar with Spanish cheese or entirely new to it, you'll leave with a richer understanding of this important cheesemaking tradition.
