Our final class in Jen's three-part Wine Scholar Series takes you inside the winery to explore the fascinating journey from freshly harvested grapes to the finished bottle in your glass. If you've ever wondered why two wines made from the same grape can taste completely different, this class will reveal the decisions and science that shape every bottle.
Jen will begin with a guided overview of the entire winemaking process, following the path from harvest through fermentation, aging, and bottling, while highlighting the key differences between white and red wine production.
We'll then dive into fermentation—the stage where science truly becomes magic. You'll discover how tank versus barrel fermentation influences aroma, texture, and flavor. Along the way, Jen will explain what fermentation actually is, what's happening inside the wine, the importance of temperature control, common winemaking techniques, and the role of malolactic fermentation.
Next, we'll uncover the purpose behind fining and filtration, exploring why some wines undergo these finishing steps while others are left untouched.
Finally, we'll examine one of the most important decisions a winemaker makes: aging. Learn how barrel type, vessel size, and time transform a wine's structure, complexity, and character—and why patience often creates greatness in the glass.
This Wine Scholar Series is designed to go beyond our traditional wine tastings. Rather than simply tasting and discussing the wines, we'll spend time exploring the "why" behind every step of the winemaking process.
