Reception Pour — NV Blanc de Blanc Sparkling Passed hors d'oeuvres as guests arrive and mingle with Zach. A 100% white-grape sparkling (classic Blanc de Blancs style) — crisp, citrus-driven, and a clean opener before the richer courses.
Course 1 — Seared Scallops with Shaved Fennel Salad Paired with 2019 River Tusque Chardonnay — Bennett Valley (Spring Hills & Henry David vineyards), hand-sorted, whole-cluster pressed, barrel-fermented and aged on the lees. Textural weight and stone-fruit/citrus depth balanced by bright acidity.
Course 2 — Wild Mushroom Risotto topped with Sliced Smoked Duck Breast Paired with 2020 Emilia's Cuvée Family Reserve Pinot Noir — Sanglier's top-rated Pinot bottling, a Family Reserve tier above the standard Old Camp Vineyard release. Expect more concentration and depth, with the earthy, savory Pinot character that mirrors the smoked duck and mushroom.
Course 3 — Braised Short Rib with Britt's Rosemary and Lavender Mashed Potatoes Paired with 2021 Left Tusque Cabernet Sauvignon — Sonoma County, Gold Medal (Sonoma County Harvest Fair). Structured and full-bodied, with a savory, herbal edge that plays well against the rosemary and lavender.
Course 4 (Final) — Apple Berry Tart Paired with 2021 Le Cochon Sauvage Zinfandel — Bennett Valley, Gold Medal (Sonoma County Harvest Fair). Jammy, bramble-fruit-driven old-vine character that mirrors the berries while standing up to the baked apple spice.
