Step 1: See the bartender and say, "Hey! I'd like to start Kölsch Service!
Step 2: The bartender serves your first $3 beer in a slender, 6oz glass called a "Stange". They will also give you a special coaster ("Deckel") that will keep a tally of your beers.
Step 3: Find a comfy seat in the bar and let the Kölsch come to you! The server will mark your "Deckel" for every fresh "Stange" that you're served.
Step 4: Are you done or need a break? Place your Deckel on top of your glass! Bring your Deckel to the bartender when you're ready to tab out!
