Our guest of honor will be the talented Chef Valentina Sanclemente, joining us from the prestigious Cala Bugutu Hotel in Custonaci. Together, we will prepare two iconic dishes from the Trapani tradition: cassatelle in both savory and sweet versions.
Savory Cassatelle: A Journey Between Sardinia and Sicily
Savory cassatelle are ravioli with an intricate braided closure, very similar to Sardinian culurgiones. In Sicily, this unique sealing method is called “Pigghia e ppunci” (grab and pinch) or a spighitta (little spike). Trapani, a historical crossroads of cultures and trade, has adopted and made this preparation its own over the centuries.
In Custonaci, these cassatelle are traditionally filled with sheep ricotta, parsley, a touch of sugar, and cinnamon, then cooked in a flavorful meat, fish, or chicken broth. We will present them in a rich meat broth—succulent, flavorful, and simply irresistible!
Sweet Cassatelle: A Piece of Sicilian History
Sweet cassatelle from Trapani, on the other hand, are a historic dessert originating in Calatafimi around the 1700s, now beloved throughout Sicily. These small crescent-shaped pastries feature a delicate, crispy dough scented with orange and Marsala wine, enclosing a creamy filling of sheep ricotta, sugar, chocolate chips, and lemon zest.
Fried and served hot with a dusting of powdered sugar and cinnamon, they are an explosion of flavor!
