This Pasta al Forno Class invites you to master a crowd pleasing special occasion dish—the deluxe Italian baked ziti. Throughout this 2.5-hour session, students will move from learning how to prepare a meat sauce to the assembly of a rich, multi-layered pasta bake featuring traditional ingredients like salami, provolone, and hard-boiled eggs.
​What You Will Learn
​- The Meat Sauce: Learn to build a robust red sauce starting with a beef base, Italian canned tomatoes, and fresh basil.
​- Pasta Precision: Master the technique of cooking rigatoni ‘al dente’ to ensure it maintains the perfect texture after its second cook in the oven.
​- Deluxe Layering: Discover the traditional style of assembly, incorporating creamy whole-milk ricotta, chopped hard-boiled eggs, salami, and a trio of cheeses.
​- The Perfect Bake: Understand the timing and temperature required to achieve a golden-brown, bubbling finish that is characteristic of authentic pasta al forno.
​Class Schedule
​- Introduction (15 mins): Welcome, instructor introductions, and an overview of the regional history of Pasta al Forno.
​- Sauce & Pasta Prep (45 mins): Live demonstration and student participation in browning meats, simmering the sauce, and boiling pasta to the exact underdone state required for baking.
- ​Break (15 mins): Leg Stretch and beverages refills.
- ​Assembly & Layering (30 mins): Construction of the dish, focusing on the proper distribution of the ricotta, meats, and eggs.
- ​Baking & Dinner (45 mins): While the pasta bakes to golden perfection, we will cover storage tips, common variations, and serving suggestions. Then each student will be served a portion of pasta al forno to enjoy in class.
​Amenities Included
​- Refreshments: Access to a snack counter including house-made drinks, light appetizers, and a coffee station.
​- Tools & Equipment: Class aprons, and all necessary preparation tools.
- Dinner: Every student will enjoy a generous portion of the Pasta al Forno in class.
Notes:
- Tickets are NON-REFUNDABLE! If you are unable to attend the class, you may transfer the ticket to another person. Tickets are not transferable to another class.
- Doors will open 10 minutes before listed class start time. Students wishing to grab seats together are encouraged to arrive when doors open, otherwise we cannot guarantee reserved seating regardless if tickets were purchased together or not.
