In this class, students will learn how to prepare a velvety Pasta alla Carbonara, and how to hand-knead fresh egg dough and use a traditional wooden pasta guitar (chitarra) to cut thick, square-edged Tonnarelli.

What You Will Learn
- Dough Hydration: Learn the golden egg-to-flour ratio for silky, elastic pasta dough.
- Chitarra Technique: Master pressing dough sheets through steel wires for sharp, square strands.
- Fat Rendering: Learn to slow-render guanciale for maximum flavor and crispy texture.
- The Velvet Emulsion: Master combining egg yolks and Pecorino Romano without scrambling.
Class Schedule
- Introduction & History (15 mins): Welcome, instructor introductions, and access to snacks and beverages.
- Dough Mixing & Kneading (15 mins): Hands-on dough making as students build a flour well, incorporate eggs, and hand-knead the dough.
- Sauce Ingredient Discussion (15 mins): A deep dive into sourcing and prepping the core components of Carbonara
- Break & Dough Rest (15 mins): A brief leg stretch and beverage refill while the pasta dough rests to relax the gluten.
- Pasta Cutting (45 mins): Hands-on rolling and sheet preparation before using the pasta guitar to strum out fresh tonnarelli strands.
- Sauce Prep & Service (25 mins): The final cooking of the sauce and pasta.
- The Feast (30 mins): Sit down with your classmates and enjoy a bowl of fresh pasta you built from scratch.
Amenities Included
- Refreshments: Access to a snack counter including house-made non-alcoholic drinks, charcuterie and fruit skewers, and a Keurig coffee station
- Tools & Equipment: Individual stations equipped with class aprons and all necessary cooking tools, including pasta machines and guitars
- Recipes: Every student receives the recipe handouts used in class so this dish can be recreated at home
Meal: Each student will be served a full plate of the dish prepared in class
Notes:
- Tickets are NON-REFUNDABLE! If you are unable to attend the class, you may transfer the ticket to another person. Tickets are not transferable to another class.
- Doors will open 10 minutes before listed class start time. Students wishing to grab seats together are encouraged to arrive when doors open, otherwise we cannot guarantee reserved seating regardless if tickets were purchased together or not.
