Immerse yourself in the true taste of Ontario’s harvest with a thoughtfully curated menu by Executive Chef Luciano Schipano.

🍴 Menu:

First Course:

• Three Sisters Salad: A traditional mix of corn, beans, and squash, served with local greens, sunflower seeds, and a maple-mustard vinaigrette.

Second Course:

• Smoked Trout and Wild Rice Cake: Ontario smoked trout served atop a wild rice cake, accompanied by a drizzle of cranberry coulis and garnished with watercress.

Main Course:

• Venison with Juniper Berry Reduction: Seared venison loin sourced from a local farm, served with roasted sunchokes, foraged mushrooms, and a juniper berry reduction.
