Through a mix of classroom instruction and live-fire demonstrations, Tuffy and Shane will teach a five-course meal built around seasonal ingredients, showing how to enhance meats, vegetables, and sides with intention.
You’ll learn meat selection and trimming, rubs and sauces, brines, mops, and spritzes, along with fire management using charcoal, wood, and a range of cookers. Expect a full day of hands-on learning, great food, and real insight from two world champion pitmasters and French-trained chefs.
Held in Richmond, VA, this intimate class (limited to 36 students) includes breakfast, lunch, snacks, and drinks.
