About our Guest Speaker:
Bill Lark is a pioneering Australian entrepreneur who revived whisky distillation in Tasmania after a 150-year ban. In the early 1990s, he identified an opportunity in the craft whisky market, successfully changed outdated distillation laws, and founded Lark Distillery in 1992. By focusing on small-batch, premium whisky made with local ingredients, Bill built an award-winning brand that helped establish Tasmania as a world-class whisky region. His entrepreneurial vision extended to collaboration, as he actively supported and mentored other distillers, fostering a spirit of community that contributed to the broader growth of Australia's craft distilling industry, gaining global recognition.
About our Co-host:
Fermentation Tasmania is a collaborative hub that provides resources, infrastructure, and expertise to local fermentation producers to help scale their operations, enter new markets, and compete globally. They also strive to promote sustainable practices and strengthen the local economy through aiding research, education, and technical support.
