FINAL SUMMER POP UP EVENT SUNDAY 09/07/2025 Wrapping up our summer pop up series we have Christian Jacoby from @holler_barbque bringing some southern flavor up north on Sunday September 7th @pizza_althea to pair with some fun wines from around the world & some exciting surprise menu items from us. Here’s a little info on our friend manning the bbq pit. Born in Bethlehem, Pa. Christian currently is the butcher, protein fabricator and sausage maker at Audrey in East Nashville, TN, which was voted one of the best new restaurants by Eater in 2022. His culinary career started under Sean Fowler, at the restaurant Mandolin in Raleigh, NC. Discovering his passion for food, he relocated back to Bethlehem to further his career under the mentorship of James Beard Semi- Finalist, Lee Chizmar of Bolete restaurant. After spending the bulk of his early career learning key fundamentals, his passion for southern food and regional Appalachian cuisine couldn’t be ignored. In the summer of 2022, his journey to discover what southern food meant, to him, started. For the last three years, he has worked for James Beard Award winner Sean Brock. Starting as a line cook working dinner service, he made his way through all stations of the kitchen, where he developed an affinity with ember cookery while working the Hearth. Christian has cooked for chefs such as Jose Andres of World Central Kitchen, Rodolpho Guzman of Boragó and Trevor Gulliver from the restaurant St. John in London, to name a few. Additionally he has traveled to places such as Massachusetts to cook for Sean Brock at a James Beard sponsored dinner. Today, he specializes in the fabrication of proteins. This includes curing, smoking, butchering and sausage making.
