Mexico’s rum history is older and more complex than many expect. Cane arrived in the early colonial period, and by the 1600s rural communities were already fermenting and distilling rustic cane spirits, the ancestors of today’s Mexican rum. Over time, regional traditions evolved: volcanic soils shaped flavour, high‑altitude cane brought intensity, and small‑scale producers kept local methods alive even as tequila and mezcal took centre stage.
Today, Mexico’s rum scene is undergoing a renaissance. A new generation of distillers is embracing fresh‑cane distillation, agricole‑inspired techniques, and long, expressive ageing, creating rums that feel both deeply rooted and refreshingly modern. These are spirits with identity: bright, aromatic, mineral, spicy, and unmistakably Mexican.
This session celebrates the fresh‑cane clarity, layered aromatics, and regional terroir emerging from Mexico’s most exciting rum producers. Expect rums that are bold, structured, and full of character: shaped by volcanic earth, coastal breezes, and the craft of distillers who are redefining what Mexican rum can be.
We’ll explore how Mexico’s rum makers honour cane, land, and lineage. From historic rural traditions to contemporary distilleries pushing innovation while staying true to the country’s agricultural heritage.
