Join European-trained Chef David Plonowski to explore the endless possibilities of cooking vegetables without relying on recipes. This hands-on class is designed for vegans, vegetarians, and anyone looking to incorporate more plant-based meals into their diet while learning foundational techniques that will elevate their cooking skills. Whether you're looking to enhance your meals with vibrant vegetable dishes or transition to a healthier lifestyle, this class will provide you with the confidence to cook without recipes.


In this class, you’ll learn how to:
  • Steam and season, roast, blanch and shock in an ice bath, and sauté blanched vegetables to perfection.
  • Steam, sauté, and season in one pan.
  • Create flavorful pan sauces by deglazing with wine and butter.
  • Puree vegetables into smooth sauces, layer seasonings effectively, and make herb and seed salts.
  • Perfect the "Art of Garlic" to enhance any dish.

You’ll also gain a deeper understanding of how to create unique flavor profiles using different oils, butters, fresh and dried herbs, spices, and salts.

At the end of class, you’ll receive a simple reference guide with cooking ratios, techniques, and suggested kitchen tools and equipment. Chef David will also share recommendations for local stores where you can find international ingredients to expand your "kitchen toolbox."


About Chef David Plonowski

David started his culinary career in Salamanca, Spain, in 1999, spending four years mastering techniques in professional kitchens. Since then, he’s worked as an Executive Chef, Culinary Director, Corporate Executive Chef, and Research and Development Chef, opening six restaurants in four different countries. Over the past 22 years, David has traveled to 23 countries, exploring cuisines from more than 300 cities. He’s been a proud resident of Columbus, Ohio’s Italian Village for the past seven years.
