For this special LUX VIP dinner, guests will enjoy a curated three-course menu with choice, including:

• Tiger prawn salad, sorrel, minutina, chicken skin, cucumber sauce
• Raw wagyu beef, caterpillar mushroom, nashi pear, anchovy cream
• Guinea fowl neck sausage, pistachio, spring herb salad, jus gras

Main (choice of one)
• Spiced Aylesbury duck breast, cherry vanilla purée, witlof, pickled ginger
• Aged Borrowdale pork loin, spring peas, buttermilk, black garlic glaze
• Rangers Valley wagyu Denver steak, charred cipollini, karashi mustard, onion jus

Dessert (choice of one)
• Spiced mango ice cream, yoghurt mousse, tonka bean, macadamia
• Dark chocolate parfait, hazelnut, blackberry, whiskey caramel sauce
• Liquorice custard, coconut & white chocolate cream, mandarin
