About this Event

Japanese Vegan Cooking with Koji Seasonings & Vegan Dashi

Experience authentic Japanese home cooking taught by a native Japanese instructor and Certified Gut Health Advisor®. In this hands-on class, you’ll learn how to make nourishing fermented food–based dishes just like we enjoy in Japan — comforting, balanced, and full of deep umami.

We’ll create miso soup completely from scratch using vegan dashi (no MSG or additives!) and cook with koji seasonings like salt koji and miso to boost flavor naturally, without relying on oils or sugars. You’ll go home with skills and knowledge you can use for healthier, everyday meals.



🍱 MENU — All Gut-Friendly, Fermentation-Focused

• Miso Soup [Carrot & Spinach] with Vegan Dashi
Learn the foundations of umami-rich miso soup using plant-based dashi made from traditional Japanese ingredients.

• Salt-Koji & Shiso Japanese Pickles (Tsukemono)
Refreshing, probiotic-forward pickles that support digestion and hydration.

• Tofu & Seaweed Salad with Sesame Miso Dressing
A light yet nutrient-dense salad with creamy, savory miso dressing.

• Mushroom Takikomi-Gohan with Haiga Rice
Flavor-packed mixed rice featuring assorted mushrooms and gut-friendly fiber.

• Koji Amazake Dessert Drink
A naturally sweet, fermented rice drink served with a touch of matcha.



STATION SETUP:

You will be cooking in teams! Groups of 2–3 will share their own station. Solo attendees* will be paired with a partner. Larger groups (4+) will be split across adjacent stations to ensure everyone has plenty of elbow room to cook!

*Note: If you are attending solo and strictly prefer a private station, please email us to inquire about availability and a 'Single Supplement' fee.

CLASS POLICIES

To ensure a safe and enjoyable experience, please review the following class policies BEFORE BOOKING:
- Minimum Enrollment: Classes require at least 6 participants. If a class doesn’t meet the minimum, it will be canceled 48 hours before the start time and a full refund will be issued.
- Age Requirement: Participants must be 18 years or older, as classes involve knives and gas stoves.
- Group Setup: You’ll always cook with your own partner(s)—never with strangers. Each pair or small group (up to 3 people) shares a workstation. Groups of 4 or more will have additional stations.

- Allergies: Ingredients may vary; please confirm allergies before booking.
