Description:
Light as air, subtly sweet and perfectly bite-sized, there is a lot to love about classic French macarons. Perhaps the only strike against them is that they can be intimidating and temperamental for home bakers. Join guest teacher Fred Csibi-Levin for a hands-on class where those fears will be banished—and you'll never again have to pay bakery prices for individual macarons.
Fred, who got a PhD in science before pivoting to pastry, will start with a true deep-dive into the mechanics of these deceptively tricky treats. You'll come to understand the technical aspects of meringue, which is the basis for all good macarons, and get comfortable with the term "macaronage." With Fred as your on-hand troubleshooter and cheerleader, you'll pipe, rest—we never skip the rest; you'll learn why—and bake your way to a batch of macarons that you'd be proud to display in any Parisian patisserie window.
In this class, you’ll be making two of Fred's favorite flavors: a raspberry macaron filled with dark chocolate ganache and a tiramisu-macaron filled with coffee-spiked mascarpone cream. Both recipes are drawn from Fred's debut cookbook "Mastering Macarons" and represent exactly what his work is about: making the exacting art of French pastry accessible to everyone through a clear understanding of the science behind it.
At this hands-on class, you’ll work in pairs at fully equipped cooking stations with the guidance of your lead instructor. Since you’ll work up an appetite making all these macarons, we’ll conclude class with a family-style meal prepared for you by the Milk Street team. You’ll be asked to inform us of any dietary restrictions in your registration form. You are welcome to BYO wine, beer or a non-alcoholic option to enjoy with dinner; alcohol is not included with this ticket. Bring take-home containers to transport your macarons home in: you’ll have plenty!
About Fred: Chef Fred is a scientist turned pastry chef. Since honing his craft, he has worked as an executive pastry chef at an upscale bakery, consulted for large restaurant groups, bakeries and recently authored his first cookbook Mastering Macarons. He is a chef instructor at Cambridge School of Culinary Arts and teaches in many locations around the country. His brand, Doc Macaron, aims at making baking accessible to everyone by understanding the science behind. He offers workshops, customized pastry training, recipe development and creation of digital assets. Fred’s work has been featured by Buzzfeed, Tastemade, the Pastry Arts Magazine, among others; he has competed on the Food Network and his social media channels have amassed over 300K followers.


Our hands-on cooking classes are capped at 14 attendees. Students work in pairs of two at fully equipped stations. Each attendee requires their own ticket.
This class is vegetarian and can easily be adapted for gluten-free and nut-free diets. However, please note that Milk Street is not an allergen-free space; if your allergy is severe, please get in touch before registering to understand if this event is a good fit for you.

Is this an in-person event?

Yes. This event will take place in person at our location at 177 Milk Street in Boston. Expect plenty of hands-on cooking - not just a demonstration! If you are looking for a livestream cooking class, you can find our upcoming virtual class calendar here.

What are my transport/parking options getting to the event?

Parking garages:

The entrance to our school is directly across from 49 India Street. Our entrance doors have two bowties on them.

Is my registration ticket refundable?

No. We do not offer refunds for in-person registrations. However, your ticket is fully transferable to another person for this event on these dates. You are responsible for finding someone to use your ticket, arranging reimbursement, and for sending us the new attendee's full name, contact information, and any special dietary requests.

Is a meal included?

Yes. In addition to a snack midway through class, you will sit down to a full dinner, served family-style, at about 7:30 pm.

I have an allergy or dietary restriction. Can I still come?

We work hard to accommodate as many allergies and dietary needs as possible. You are welcome to write us at [email protected] to get more detailed information on whether this event is a good fit for you.

Are children allowed?

Children 11-17 are allowed to participate if they attend and cook with an adult parent or guardian. The minor and the adult must each have a ticket to the class.

How many people does one ticket cover?

One ticket covers one attendee.

How early do I need to arrive?

You are welcome and encouraged to arrive up to 15 minutes before the event begins.
