We recently completed our Cuisines of the World series, having traveled to countries of the world, A to Z, with each month dedicated to countries starting with the same letter. Now we’re going to distill things even further, visiting a particular country each month, and we’ll start off with our southern neighbor, hopefully featuring dishes that we rarely see in Mexican restaurants locally.
