Dinner at Mine: An Intimate Cowboy Supper at Neon Cowboy

Dinner at Mine is an in-person, one-night-only dinner hosted by chef Caitlin Howington for the general public.

This intimate, communal supper club is not a traditional plated dinner. We’ll begin with Saloon Hour: snacks at the bar, passed bites, and time to grab a drink and mingle before sitting down together for a family-style supper.

Before opening Pint's Peak Ice Cream, Caitlin spent nearly a decade in restaurant kitchens as a pastry chef, prep cook, line cook, and sous chef. After years away from restaurant kitchens, Dinner at Mine began in August 2026 with a sold-out 14-seat dinner at Cimera. Each dinner is a chance to cook beyond the confines of an ice cream menu, with small, one-night-only menus built around whatever Caitlin is excited to make next. The menu, format, and setting can and will change.
