Sharpen your culinary skills this season with a hands-on winter workshop designed to deepen your understanding of how to develop complex flavors. Guided by Smokebrush Chef Aimee Morrow, you will explore foundational methods for building deep, layered flavor in winter cooking: roasting and caramelization, achieving richness without cream, incorporating fermented elements, and finishing dishes with herb and chili oils for brightness and lift.Working with organically farm-sourced ingredients, you will prepare two soups inspired by the winter harvest:
• Roasted Winter Squash & Carrot Soup with Salsa Macha, Sour Cream, and Cilantro (vegan, gluten-free; contains cashews and peanuts)
• Salmon, Potato & Fermented Sunchoke Chowder finished with Winter Herb–Infused Olive Oil (gluten-free; includes butter, no cream)
After the cooking session, you will sit down to a meal rooted in the farm itself: enjoy both freshly prepared soups served alongside a salad of Smokebrush farm greens with house vinaigrette, a slice of Sweet Melody’s sourdough with herbed farm butter, and a cup of our house herbal tea—grown, harvested, and blended on the farm from botanicals selected for their warming, winter-supportive qualities.
Participants will take home:
• One pint of each soup
• A jar of Smokebrush vinaigrette
• Complete recipes and instruction notes
