Welcome to Chapter Two by Chef Forbeees, an intimate 5 course dining experience celebrating Jamaica through a modern lens.
Chapter Two continues the story that began with my first tasting event, bringing together the flavours I grew up with, the dishes that inspire me and the creativity I’ve developed throughout my journey as a chef.
Expect familiar Caribbean ingredients transformed and presented in unexpected ways, while still keeping the heart, warmth and bold flavours of Jamaican food.
This isn’t simply about coming for dinner. It’s about experiencing a story through food, one course at a time.

IMPORTANT GUEST INFORMATION
Arrival Please arrive promptly for 6:30pm. As Chapter Two, is a 5 course tasting experience, courses will be served at scheduled times. Late arrival may mean that you miss part of the experience. Dietary Requirements & Allergens This menu includes a variety of ingredients and may contain allergens, including fish and shellfish. Please inform Chef Forbeees of ALL food allergies, intolerances and dietary requirements no later than 4 days before the event. This allows us time to confirm whether your requirements can be safely accommodated and, where possible, prepare suitable alternatives. Due to the nature of a set tasting menu and shared kitchen environment, we cannot guarantee that any dish will be completely free from traces of allergens. Guests with severe or complex allergies are asked to contact Chef Forbeees before purchasing a ticket. Unfortunately, dietary requirements or allergies disclosed after the 4-day deadline may not be able to be accommodated. Tickets & Refunds Tickets are refundable up to 7 days before the event. After this point, tickets are non-refundable due to advance ingredient purchasing and preparation. If you are unable to attend, you may transfer your ticket to another guest. Please provide their name and any relevant dietary or allergen information in advance. Please note: The menu may be subject to small changes depending on ingredient availability. I prefer this wording because it protects you without claiming every allergen is present. Once we've finalised the exact five courses, we can make a proper allergen list for each dish separat
