Cassoulet and Wine Feast

The dead of winter is the perfect time to pair some fascinating and hearty wines with that most classic of mid-winter dishes: Cassoulet. And to spend a warming evening with friends, fellow wine lovers, us, importer Ed Addiss of Wine Traditions and – of course! – Chef Jacques Imperato. So bundle up and join us on Wednesday and Thursday, January 28 and 29 for the annual Chain Bridge Cellars and La Côte D'or Cafe Cassoulet Feast!

Working with our favorite specialist in wines of the southwest of France, Ed Addiss, Chef Jacques is going to cook up a luscious four course feast including a savory welcoming bite, a light/fresh salad or seafood (or both!) course, and delicious and not too sweet desert.

The star, of course, will be Jacques’ Famous Cassoulet! And the wines – including two robust reds with the cassoulet and a total of five throughout the meal.
What is cassoulet? It's a rich, deeply flavored, casserole of meats like garlic sausage, duck confit, pork and more buried in creamy white beans. While found all over southern France, its most famous home is in Toulouse where the deep, round, earthenware pot with slanting sides called a "cassoulet" gave its name to the dish.
