Step into a dynamic cooking experience where you’ll explore the depth and richness of Caribbean cuisine through guided, hands-on instruction. Learn to prepare signature brunch inspired dishes such as perfectly spiced jerk chicken and golden sweet plantain waffles—balancing layers of savory heat with tropical sweetness. Along the way, you’ll gain insight into traditional techniques, flavor building, and ingredient pairings that define island cooking.

Instructor:Claude Lewis is a Jersey City–based chef, entrepreneur, and Food Network Chopped Champion known for his bold, globally inspired cuisine with strong Caribbean influences. With a passion for storytelling through food, Claude blends vibrant flavors, cultural heritage, and modern technique to create dynamic culinary experiences. In addition to his television appearances, he is deeply connected to the local community, using his platform to inspire and engage through food, culture, and education.

Culinary Class Refund Policy:
- All sales are final due to the limited seating in our kitchens, as well as the amount of prep time and food cost associated with each registered student.
- While we don’t offer refunds or credits, you may send someone to attend in your place. We ask that you please email us well in advance so that we can be prepared for any changes to the guest list.
Culinary Class Schedule Changes:
- If the College Cancels a Course a full refund is issued.
- Non-attendance to a Class/Program does not constitute a withdrawal, nor entitle the participant to a refund.
- Please confirm work schedules before registering for classes. Refunds and credits will not be issued due to change of work schedule.
Participants will receive an email detailing information on each class a few days before the start of class.
