Welcome back to the RRSC Caribbean Dinner. Chef James Anderson is back in action after his recent adventures through the islands. Between indulging in daily rum tastings and devouring empanadas, he made it a point to explore the hidden gems of local cuisine, getting a taste of the authentic flavors that most tourists miss.

One of his memorable stops was the legendary 'pork highway' in Guavate, Puerto Rico. Get ready for a culinary journey featuring traditional dishes from various islands, including snapper, morcilla croquettes, authentic pernil, ceviche, and the rich mother-in-law sauce, alongside tostones and the best red beans & rice. All of this will be perfectly paired with some fantastic warm-weather cocktails, primarily rum-based, and a selection of island beers to round out the experience. Now that he’s back, Chef Anderson is excited to present a 9-course menu that he’s been eager to share. Expect classic favorites, some innovative twists, and a lineup of pairings that will transport you straight to the tropical vibes of the islands!
