Bourbon Tasting with Starlight Distillery

We sent a team to the distillery in August to select a barrel. And WOW, what a barrel we found!

Where a big brand works hard to create consistency, Starlight is quite the opposite. They have defined mash bills, but much of the process seems to be at the whim of the distiller. They have multiple varieties of corn, so on any particular day they might use a yellow GMO corn, one of a number of heritage corns, or some combination. The mash bill might call for 20% rye, but the distiller might decide to go with 30% today. The barrel might be from Kelvin or it could be ISC. The oak could be air dried or kiln dried. The char could be #2 or #3, etc.

The barrel we selected was a very special one, a blend of 3 and 4 grain bourbon finished in a barrel made from Oak trees from the Nevers region of France.

We'll be meeting at Pegasus headquarters on Poplar Level Road. Pegasus offers planning and transportation for distillery tours, and they do a fantastic job. We appreciate them hosting this event!

In addition to tasting our barrel pick, we'll taste through a variety of delicious bourbons from Starlight Distillery.
