• Understand the differences between fondant, modeling paste, gum paste, and modeling chocolate, and learn the ideal uses for each.
• Master the art of coloring and weighing modeling paste for consistent, successful figures, with precise measurements provided for the bear figure.
• Follow step-by-step instructions to create the bear’s body parts, attach them, add texture, and utilize essential sculpting tools.
• Learn proper storage methods for finished figures and techniques for placing them on a cake.

This class is designed to be beginner-friendly, welcoming participants with all levels of experience. Even if you’ve never created a modeled figure before, you’ll be guided step-by-step to complete a festive bear figure with confidence. Plus, the bear you create during the session will be perfect to use as a holiday cake topper – just store it as instructed, and it will be ready to add a special touch to your holiday treats!

Nikki Lam’s passion for baking and cake decorating began at a young age. She eagerly anticipated the arrival of the Wilton yearbook each year, drawing inspiration for her creative confections. For Nikki, the kitchen has always been a place of experimentation and joy, where crafting delicious and visually stunning creations became her calling. With over 16 years in the food industry and 35 years of cake artistry, she now owns and operates Nikki’s Sweets and Adornments, specializing in cakes, macarons, and other delectable treats. Nikki also creates intricate modeling paste figures and edible flowers for local bakeries and through her Etsy shop. Beyond crafting sweets, she delights in teaching others her craft through classes, YouTube tutorials, and engaging educational reels. Nikki brings enthusiasm and expertise to every class and looks forward to guiding participants in their own sweet journeys.
