We’re excited to welcome Red Bird Estate Winery from Creston, BC to Bramasole for a special one-night wine dinner celebrating the flavours of the Kootenays.
Red Bird Estate Winery is a small, family-run winery overlooking the Creston Valley, known for crafting expressive, small-lot wines that reflect the unique terroir of the Kootenays. For this collaboration, we’ve paired their wines with a five-course menu created by Chef Corey, highlighting seasonal ingredients and bold, comforting flavours.
Guests will enjoy a thoughtfully paced dinner with five courses and wine pairings, each designed to complement the character of Red Bird’s wines.

• Beet, roasted squash, charred oranges, hazelnuts, sheep ricotta
brown butter vinaigrette
• Rabbit & truffle risotto
Grana Padano, arugula oil
• Pan-seared scallop
potato purée, bacon lardons, caramelized onion, corn salsa

gorgonzola butter, salsa verde, broccolini, baby carrots
• Fresh raspberry & chocolate ganache torte
vanilla gelato, pistachio, mint, espresso tuile
