The dinner will feature:

• Spicy, sour, sweet, and smoky torched salmon with jalapeño peppers, finished with a maple sugar glaze
• Baby spinach, massaged with tamari dressing, topped with gorgonzola-stuffed poached pear and pumpkin bread croutons
• Orecchiette tossed in a ramp pesto, served from a Parmesan wheel and topped with toasted Pepito’s
• Grilled flank steak with a cappuccino porcini mushroom sauce, cauliflower risotto, and sweet potato
• Handmade cannoli for a sweet finish
• A selection of assorted cheeses with traditional accompaniments
