Wild Food in Summer
About this Event
Explore with me summertime on Corstorphine Hill, one of Edinburgh's lovely green spaces. We will meet at the Walled Garden, take a gentle walk through August woods and meadows, look at the edible and toxic wild plants and fungi that are already emerging this time of year, discuss foraging laws, ethics, and safety, and taste the wild flavours we encounter in a variety of delicious and surprising foods and drinks. Our walk will be 3-4 hours long, go over muddy, uneven and steep terrain, and include a minimum of fifteen foraged food and drink samples. (please message me in advance about dietary requirements)

Info: -Sloe gin and tonic -Wild herb salsa bruschetta -Natural winter beech leaf fizz -Winter beech leaf wine -Korean-style velvet shank pancakes with a magnolia blossom and few flowered leek dipping sauce -Wood ear and wild garlic dumplings -Hedgerow wine -Bittercress, Beetroot, and goat cheese baguette -Cream of wild mushroom soup -Greek yogurt with Winter jewel jam ( Hogweed seed, carrot, rose and pistachio) -Roasted Birch twig tea with winter chanterelle syrup -Wild mushroom quiche -Sloe gin soaked chocolate covered wood ear mushroom -Candied winter chanterelle -Rosebay willow herb tea -Scone with clotted cream and sloe, plum, and juniper jam -Hazel pollen and wild hazelnut chocolate tart -Epine (digestif) -Smoked cheddar with rosehip ketchup and wild pickles
