How we taste can change the way we think about food, how we consume it, and how our mind, body and spirit can benefit from it. How should we leverage taste to address the issues of contemporary society? How can we taste to meet our dietary needs, satisfy our appetites, and honor the nature and limits of our food landscape? Join us as we welcome nutritionist and anthropologist Dr. Melanie Narciso, from UVM’s Climate Kitchen, to explore how to taste differently, aiming for deep pleasure that satisfies both body, society, and planet. We will introduce “attentive tasting” or slow tasting of potatoes that savors not only the physical elements but also the biological, cultural, spiritual, and other dimensions of food.
