In this workshop, we’ll explore the origins of white tea, primarily in Fujian, China, and learn what makes this category so unique. You’ll taste a variety of white teas—and discover the beauty of this naturally dried and lightly oxidized tea.

Yellow Teas: Rarity, History & the Gentle Pause

Often referred to as the rarest category of tea, yellow tea is an ancient and refined tradition that is slowly re-emerging. In this class, we’ll uncover the unique slow-heating process that sets yellow tea apart from green tea, giving it a smoother, mellower character. You’ll taste limited-production yellow teas and gain insight into their historic roots and modern scarcity.
