As coal mining faded out, Welsh cakes became a holiday tradition instead. Families now make these treats for holidays and special occasions, but I am sure they are still hidden away in pockets for snacking on later.
Welsh Cakes are a cross between a cookie, scone, and a pancake. They are cooked on a griddle or a hot baking stone. Made from simple ingredients and served during afternoon tea, they were a favorite special treat for Welsh children and coal miners. Children took Welsh cakes in their lunch boxes or had them as a sweet after school snack. Miners slipped them into their coat pockets to snack on during their time in the mine.
