Vincit Academy: Fundamentals of Sanitation

The Vincit Academy is an all-inclusive course, using group learning and hands-on activities to cover the basics of fundamental sanitation in food and beverage facilities. In this course we will learn:

•HACCP and HARP-C principles

•Microbiology

•Food safety hazards

•Sanitation & cleaning principles

•Root cause analysis and corrective actionplans (RCA/CAPA)

•Environmental listeria & niches

•CIP

•Biofilm removal and prevention

•Intensified cleaning principles

•GMP and best practices for RTE sanitation

•Allergens

•Foreign material prevention

•Sanitary equipment design

This course is a three day course, with Monday being a travel day.
