Crispy corn tortillas filled with hibiscus flowers and root vegetables, avocado sauce, cashew cream.

Ensalada Fresca:

Palm heats, fresh chayote squash, jicama root and greens. Paired with cilantro vinaigrette.

“Cream” of walnut soup

Vegan creamy soup thickened with nuts, topped with tortilla chips, chile pasilla & queso fresco (optional).

Sous Vided Cauliflower steak with Mole Vede

Served with calabacitas and white beans

Dessert:

Nixtamalized and candied Papaya

Piloncillo and Mezcal syrup, Yucatan style Edam Cheese (optional)

Drink:

A craft beer or drink is included, by hour host Southern Brewery
