Vault City fylder hele 8 år, og det skal selvfølgelig fejres med en masse sjove øl fra dem!
I kan forvente følgende på fad:
Foundations - 5% ABV, Dry-Hopped Sour, Year 1 - This is Vault City’s mixed fermentation base beer, the foundation of every sour we’ve brewed since 2018. Showcasing our unique house mixed culture of lactobacillus and saccharomyces, delivering a refreshing tartness with layers of fruity esters and a zingy sherbet finish. A light dry-hop of Cashmere and Bramling complements the tartness with subtle hop character.
This is where your journey into modern sour beer begins.
999G/L Apricot, Mango, Guava & Pineapple - 5% ABV, Legal Limit Smoothie Sour, Year 2 - Loaded with 999 grams of fruit per litre of beer, this is the legal limit we can add while still calling it beer.
The second release in our birthday series sees the return of our iconic 999g/L series, launched in 2019 when we took our first step into seriously heavy fruiting rates. This smoothie sour put Vault City on the map, lacing glasses up and down the UK.
It’s packed with fresh apricot, mango, guava and juicy pineapple for a full-on alcoholic fruit smoothie
Tropical Sour - 7% ABV, Mandarin, Mango & Passionfruit Sour, Year 3 - The third beer of our birthday celebration rewinds the clock back to 2020, with a tropical sour recipe from the depths of lockdown. This was one of the final beers we made when cuckoo brewing in Dundee, shortly before returning to our Edinburgh roots at our first ever dedicated brewery site.
A vibrant blend of mandarin, mango and passionfruit pairs perfectly with our house mixed culture creating something unbelievably juicy and refreshing to the very last sip.
TBH Hard Lemonade - 8,2% ABV, Sour DIPA With Riwaka, Nelson Sauvin, Motueka & Motueka Cryo, Year 4 - First brewed in 2021 from our old brewery in Portobello, this is the evolution of a sour IPA we’ve revisited countless times since the early days of Vault City.
This time, we’ve taken a fan favourite and turned it up a notch, brewing a DIPA combining our mixed fermentation base beer with fresh lemon juice, zest and a triple dry-hop of New Zealand varieties amplifying notes of citrus, white grape and gooseberry.
Fruits of the Forest - 5% ABV, Single Stacked Breakfast Waffle - Year 5 - Back by popular demand, this cult-favourite sour first created in 2022 returns with monstrous levels of indulgence. Loaded with a legendary medley of blackberries, rhubarb, strawberries, apples and raspberries, layered with maple syrup and vanilla over a single stack of breakfast waffles.
Some like it hot: pair with Fruits of the Forest Breakfast Hot Sauce made by our pals at Thiccc.
Mango, Banana & Coconut Crumble Cakes - 6% ABV, Tropical Pastry Smoothie Sour, Year 6 - This evolution of one of our most heavily fruited sours from 2023 pushes even further into a full-on pastry smoothie. Bursting with ripe mango and banana then layered with creamy coconut, it pours thick and juicy with a bold tropical intensity. And a velvety mouthfeel.
This time, we put the labels the correct way up. (Don’t ask.)
TDF Catapillar Cake - 15% ABV, Triple Deep-Fried Imperial Chocolate Stout, Year 7 - Back once again (and free of 2024’s legal troubles), our chocolate caterpillar cake imperial stout has been battered and triple deep fried specially for our 8th birthday.
Expect layers of rich decadence from chocolate malt and wheat, drenched in cholaca and cocoa powder. Sweet, intense, and unapologetically excessive, it begs the question: is anything safe from Scottish chippies… or breweries?
8 Years Sour - 8% ABV, Our Favourite Addition From the Last 8 Years, Year 8 - Eight years, eight of our favourite adjuncts. Brewed to celebrate Vault City’s 8th birthday (carrying the torch from 2025’s 7 Years Sour, this decadent dessert beer brings together a bold medley of cherry, blackberry, banana and pear, layered with cinnamon, vanilla, vegan white chocolate, and maple syrup.
We’ve thrown a lot into our beers over the years (sometimes quite literally), but for this one we wanted to shine a light on some of the additions that have defined our journey so far. A proper birthday treat.
