Uchibā Austin's September Uncommon Ramen features Guest Chef Dax Corpus
Uncommon Ramen is a monthly series at Uchibā that typically takes place on the first Monday of the month and features innovative ramen dishes developed in-house or in collaboration with guest chefs. Due to the Labor Day holiday, September's edition has been moved to Monday, September 14, and features a menu created by Chef Dax Corpus of Uchibā Austin. Born and raised in Texas’ Rio Grande Valley, the 28-year-old chef will showcase a duck-focused ramen alongside a vegetarian corn shoyu ramen and a selection of specialty dishes.

Duck Tonkotsu Ramen: duck and pork tonkotsu broth, duck chashu, duck tare – $28
Corn Shoyu Veggie Ramen: grilled broccolini, corn broth, corn bomb – $20
Duck Skewer: orange teriyaki, gobo salad – $16
Duck Gunkan: mixed goma, confit duck, fish caramel and candied quinoa – $13
Sunomono: wakame, cucumber and sesame – $6
