We're thrilled to introduce Chef Patacharapone 'Andrew' Sorlaesith future exec sous chef at Uchi Charlotte as this month’s featured chef.
Born and raised in Charlotte, Chef Andrew began his culinary journey at age 17 in a neighborhood sushi restaurant before moving to New York City to deepen his culinary foundations working in kitchens that shaped him both technically and creatively, including Tørst, Rule of Thirds, Masa, and Rosella. Many chefs he trained under were Uchi and Uchiko alumni - making it full circle that he is now part of the Uchi family as the future Executive Sous Chef for the upcoming Uchi Charlotte, located just a few blocks from where his culinary journey began.
For his Uncommon Ramen debut, he draws inspiration from his Thai and Lao heritage with a Thai-style tsukemen ramen. He is also serving Thai street food inspired tsukune, influenced by the eclectic skewers at Rule of Thirds. To round it out, he offers a leche de tigre–style ceviche evolved from his time at Rosella, featuring bluefin tuna, pomelo, avocado, and fried cashews.
