Truffle Risotto Featuring Urbani

Winter means one thing: the return of the season's best ingredients to the kitchen. These days, our Chefs are especially loving this rich recipe for Risotto ai Tartufi, or Truffle risotto. Revered as the ultimate culinary indulgence, tartufi grows wild in the woods of Northern and Central Italy. Luckily at Eataly, we receive our fresh truffles from Urbani Tartufi, the world’s most esteemed distributor of the revered truffle.

Join us at La Scuola to learn how the earthy aromas of Truffles pair perfectly with the al dente bite of rice to create the ultimate Winter dish. This hands on class is a great way to learn the skills and steps of risotto making and the art of cutting, shaving and pairing truffle to make the perfect dish.

In this class, guests will:
•Learn about the cultural origin of risotto from Lombardia.
•Discover the ingredients and techniques for seasoning and balancing flavors.
•Explore the story behind Urbani and their pantry products that give us the deep flavors of truffles all year round.
• Prepare your own risotto with the guidance of Chef of La Scuola with fresh truffle and paired with wine
• Enjoy additional Truffle inspired dishes prepared by Chef of La Scuola.
• Take home the adapted recipe and wine tasting notes.

For this event format, we advise coming to this cooking class in pairs as each workstation will be setup for two people cooking their risotto together.
