The bold, earthy, and oaky notes are anything but shy, and that is the way I like it. My appreciation for the barrel notes was only guided by my own selfish tastes until I dug in many years ago to the delicious and somewhat hidden stories about the depth of flavors that barrels bring to bourbon. Informed and armed, I dare to pair our big, juicy, and provocatively plush amber elixir as the barrel notes become the star of the show.
