Then let India take centre stage with succulent Tandoori Fish Tikka, infused with Kashmiri chilli, Kasuri methi and smoky yoghurt, finished with a bright, herbaceous mint-coriander chutney. Follow it with Moroccan M'qualli - tender chicken slowly perfumed with preserved lemon and olives surrendering to silky saffron-and-cardamom Bhapa Doi, crowned with berries and passion fruit.
